Ingredients (Zucchini Pancakes):
3 small zucchini
1 chopped scallion
2 eggs
3 tbsp sour cream
1/2 cup of flour
salt & pepper
Ingredients (Zucchini Pancakes):
1/2 cup creme fraiche
1/2 clove garlic pressed through a garlic press
salt
Preparation Instructions:
Grate zucchini on a box grater (the side with the largest grates). Wrap the zucchini with a kitchen towel and squeeze all the juice out. Don’t skip this step, else your pancakes will be watery and tasteless. Add the scallion, sour cream, eggs, salt and pepper (about 1 tsp salt and 1/2 tsp pepper) to the zucchini. Finally, add the flower, and mix. The batter should be thicker than a regular pancake, but thinner than a biscuit. It should still flow and pour easily. Pan sear until done (2-3 minutes per side).
While the pancakes are searing, combine the creme fraiche, garlic and a dash of salt in a dish. Serve the creme fresh mixture alongside the pancakes and enjoy!
